Product Review: A Trio of Vegan Baking Mixes with Gourmet Taste and Texture from Lehi Mills

Over my ten-plus years as a holistic health nut, one axiom has remained true as much as any other: vegan baked goods are delicious when purchased in a cafe or health food store from people who know what they’re doing, but not so much when I make them at home.

For whatever reason I can never get the texture right when it comes to vegan pancake mixes, brownies and cupcakes.

The good news is that there are many companies stepping up to make the process simpler for the layman baker at home, and that’s exactly why I’m a fan of the vegan baking mixes from Lehi Mills, which I was able to try recently thanks to samples from the company.

 

Lehi Mills Vegan Brownie Mix-

Of the three products sent for me to review, this one stood out as the most potentially delicious of the bunch, and it lived up to the hype.

The first thing that stands about this mix is that it’s extremely easy to whip up in a pinch just add ½ cup water and 1/3 cup vegetable oil (I used organic olive, because I’m not a fan of canola and similar oils at all) to the contents of the package, mix it up, and bake at 350 degrees for 25-30 minutes on a greased pan.

These brownies have a similar texture and rich flavor to my mom’s classic recipes, and I loved every minute of them even though they came out a bit lumpy (that’s what happens when a non-experienced baker tries to leave his comfort zone at 10:30 p.m. on a Thursday night).

The ingredients include organic high mountain wheat flour, wheat protein isolate, baking soda and cocoa.

Unfortunately, the first ingredient is sugar and the company makes no non-GMO claims for this ingredient a major red flag for me if you’ve been following this website for a while.

Lehi Mills Vegan Raspberry Cupcake Mix-

These particular cupcakes were also impressive in terms of both taste and texture.

The raspberry powder was noticeable as these had a really wholesome and delicious flavor to to them, and came out exquisitely well even without adding egg or milk to the recipe, similar to the brownie one.

If you’re looking for a delicious vegan muffin mix with a classic, gourmet texture, these certainly fit the bill.

Lehi Mills Plant-Based Pancake Mix-

This is the hardest one to review by far, because I’ve never been good at making vegan pancakes and had some of the same issues this time around.

No matter how hard I try, I simply cannot get the texture right.

This time around, the pancakes came out lumpy, unlike the other two recipes, but that was probably my fault as much as anything else.

This mix has organic whole wheat flour as well as conventional oat flour, conventional sugar (which could be GMO; the company makes no non-GMO claims on the box), as well as a little bit of soy flour, so I wasn’t thrilled about the ingredients either.

Final Verdict on Lehi Mills Baking Mixes

As mentioned earlier, these products contain no non-GMO claims aside from one major ingredient, their wheat flour.

While they use some excellent ingredients including a specialized type of organic “high mountain” wheat flour and taste amazing, it goes without saying to exercise caution before buying if you want to support the organic industry to its fullest.

One thing I will say is that these do have better ingredients than gourmet baking mixes you’ll find at a general store in a small town.
