Recipe: The Undercover Kale Smoothie (with Cherry and Papaya)

Everyone knows Kale is the King of nutrition among the dark leafy greens and one of the best superfoods on the planet, however the truth is that not everyone is fond of the taste or texture. This recipe for an “Undercover Kale Smoothie”  is a great way to get the nutritionally dense, dark leafy green vegetable into a drink everyone can enjoy (the kids won’t even know it’s there due to the reddish-orange color). This undercover green smoothie is great for both kids and adults who say they don’t “like” green smoothies.

Kale is a great source of vitamins A,C,K, omega-3 fatty acids, iron, calcium, copper, potassium, manganese, phosphorus and anti-inflammatory phytonutrients! Virtually all of the essential nutrients you need on a daily basis all packed into this wonderful plant.

Undercover Kale Smoothie Ingredients:

-2 cups of Kale

-1 whole papaya (preferably organic; many Hawaiian varieties are GMO)

-2 cups cherries (we used frozen cherries)

-1 cup water (optional)

(Note) You can also add a couple teaspoons of organic coconut oil to the mix to help absorption of the nutrients.

The papaya should provide enough liquid to emulsify this smoothie. Papayas are excellent for aiding in digestion, and the cherries are anti-inflammatory while providing a wealth of antioxidants (and taste, of course).

Blend until smooth and enjoy!
